Husband and wife team Michael and Tanya Corbin opened Today's Pizza & Salad in October 2003. Pizza guru Mike is a third generation restaurant owner, with more than twenty years experience in the pizza business. He decided to pursue his lifelong dream of opening his own restaurant here in Encinitas, where he grew up, because he wanted to stay in his community. In fact, Mike remembers eating pizza in Today's location as a child, and takes pride in continuing the tradition of great pizza in Encinitas.

Executive Chef Joshua Tiscareno, Le Cordon Bleu graduate, joined Mike and Tanya in opening the restaurant. Joshua has worked at some of the finest restaurants in Pasadena and San Diego, and has brought his talents back to his native Encinitas to Today's Pizza & Salad. Michael, Tanya, and Joshua truly love the restaurant business, not only because they love creating delicious high quality food, but because they enjoy entertaining guests. They believe every customer is like a guest in their home, and they strive to create an atmosphere that is comfortable.
